A chicory recommended for forcing to produce tightly packed, well-filled chicons of excellent quality. For delicious green salads in autumn and winter, sow mid June-mid July in shallow drills 30cm (12") apart. Thin plants to 30cm (12") apart. By late October, start cutting as you would lettuce. Row 9m (30'). For winter 'chicons' sow April-June and thin the plants to 23cm (9") apart. By October-November the parsnip-like roots should be lifted, foliage removed and stored in sand in a cool place. COOKING HINTS - Eat raw in salads or boil in salted water for 10-15 minutes. Alternatively, brush with olive oil, grill and season with black pepper!
